Kaedama: Not Your Average Ramen

Ever since the Kaedama restaurant has blossomed from humble beginnings. The popular restaurant, began as a food truck founded by Gabe Valencia and Andres Romero, as a matter of fact, the food truck was not a truck at all. The diner-on-wheels was simply a converted 1976 Volkswagen.

When Kaedama was on wheels, you would certainly see lines that are easily two-hour long waits. Luckily for myself, I was able to get my food in thirty minutes (as long as you are complacent with taking your meal to-go). I opted out on eating at the restaurant because their permanent location is a bit of a cramped space and of course they were at their seating capacity. However, if you do decide to wait it out, be sure to expect long waiting times and dress appropriately for the weather as you will be waiting outside the building until any tables have become available.

Fortunately, this restaurant is “broke-high-school-student” friendly, the prices on the menu range from about five to ten dollars. If you chose to eat here, you can assure that you will receive great quality food and an exceedingly affordable price.

The staff at Kaedama was exceedingly welcoming and friendly. The servers were very relaxed and friendly but still incredibly professional. Each worker had a role in the restaurant and each worker fulfilled their role. Watching the staff bustle around each other in the cramped space was fascinating as they appeared to be a well-oiled machine that meshed so well with one another. There was a sense of camaraderie and a high respect for their work while still remaining humble. When an error was made with an order, they corrected the mistake quickly and ensured that everything is in order.

Now, for what you actually care about; the food. There is a reason Kaedama always has never ending lines and that reason is that their food is impeccable. Their ramen is truly a taste to behold and it is sure to keep you coming back time after time. From the broth, to the noodles and to the tofu, every bite leaves you wanting more and more. They also have other menu items such as dumplings that do not disappoint.

Overall, Kaedama is a wonderful locally owned restaurant that was voted the second best food truck in El Paso out of 468 registered trucks. I highly recommend Kaedama as your next dining experience if you haven’t tried it yet.

If you do choose to visit the restaurant, the address is 204 Boston Ave. They are open from 12a.m.-10p.m. Monday through Thursday and 12p.m.-12a.m. on Friday and Saturday, they are closed on Sundays.
